Description for Gite

'Les Caselles: A Sustainable and Historic Farmhouse on the Causse

Embracing the rich local history and promoting sustainable and quality tourism, our farmhouse, "Les Caselles," has a captivating story that dates back to the 17th century. Nestled in the heart of the Grands Causses Natural Park, this authentic Aveyron building boasts the expertise of the renowned builders from the nearby village of Saint-Beauzely, who utilized sandstone quarries to create its remarkable structure.

Situated near Millau, the Gorges du Tarn, and the Larzac plateau, Saint-Beauzely is renowned as the birthplace of the skilled builders responsible for the fortifications of the Templar and Hospital cities, including the villages of La Couvertoirade, La Cavalerie, and Sainte-Eulalie de Cernon.

Once a significant Causses farm in the picturesque hamlet of Azinières, "Les Caselles" played a vital role in the production of the famous Roquefort cheese. Covering over 400 hectares at its peak, the farm provided a haven for ewes on the nutrient-poor land of the Causse Rouge, which is home to exceptional flora.

However, over time, the farm fell into disrepair and neglect under the care of tenant farmers, jeopardizing the proud Caussenarde building's legacy.

In the year 2000, an adventurous buyer embarked on an extraordinary renovation project, with the initial vision of creating a farm inn and breathing new life into this historic site. Thus, "Les Caselles" was finally unveiled to the first curious travelers.

Today, in the winter of 2020, Mikaël and Alizée Pélégry have decided to revolutionize their lives with a renewed focus on quality and ecological transition, aiming to promote sustainable and responsible tourism.

Having worked as the director of a Parisian theater, Mikaël's reflections on his life's priorities were prompted by the significant events in the performing arts industry in 2015. The recent birth of his daughter further solidified his determination to seek a unique living environment, ultimately leading him to the beautiful county of Aveyron, where his family has its roots.

In the face of pressing environmental challenges, Mikaël and Alizée set themselves the ambitious goal of transforming this old farmhouse into an eco-friendly, low-energy home. With the help of local experts, they have achieved energy consumption levels comparable to a single-family home, offering five top-of-the-range guest rooms, a charming gite, and various communal and private spaces.

Today, they take pride in alleviating their guests' guilt and encouraging responsible behavior by providing high-performance, eco-friendly amenities. From small everyday gestures to significant renovations, they strive to reinvent themselves continually. Whether it's upgrading the heating system, transitioning to LED lighting, utilizing rainwater, installing solar panels, or offering electric vehicle charging points, every action contributes to their sustainable and responsible approach to tourism.

The table d'hôtes, or communal dining, is no exception to their eco-friendly practices. They prioritize short circuits, sourcing fresh, local, and high-quality products, allowing guests to discover the richness of our Aveyron region and showcase our local producers.

Ultimately, Mikaël and Alizée aim to provide an authentic Aveyron experience, positioning "Les Caselles" as one of the finest guest houses in the region. Their unwavering commitment to hospitality and quality ensures that each visitor enjoys an exceptional and memorable stay.

This "slow tourism" project aims to attract a diverse range of visitors to Aveyron, offering picturesque, sporting, and environmentally-friendly holidays.'
